Pandemonium is an experiment about one food related topic: goose and duck liver foie gras.
A time ago I encountered food unknown to me. My grandmother made it from geese and duck slaughtered behind a wooden shed all the way back by the forest and the pond. Once you live in France it doesn’t take long to partake the ceremony of sharing Foie Gras over New Years’ dinner. Champagne, sweet white wine, a Sauterne, and the memories linger always.
Now you encounter some whose view is they do not share that ceremony – nor will they ever find meaning in it – of tasting Foie Gras. They claim the animals whose livers are used for Foie Gras production come from tortured, suffering animals.
